Let’s Cook! Korean BBQ-Style Burgers

With the announcement that South Korea would be one of the new additions to this years Epcot Food & Wine Festival, we here at the Eating and Drinking Around the World kitchens did a little jig (or whatever the Korean dance equivalent would be…) then decided a bit of Korean cooking should be in store…

So here is a not-really-authentic, but more “Korean-style” recipe from my new Culinary Goddess, Jaden Hair from her “Steamy Kitchen Cookbook”.

I’m going to abbreviate the descriptions a bit, so if you want the full Jaden style, go and get her book…

A preview of things to come...

Korean BBQ-Style Burgers

1 1/2 lbs Ground Beef (I used Chuck)

3 tbl minced Garlic

3 tbl grated fresh Ginger (okay, I finely minced mine…)

3 tbl minced Green Onion

2 1/2 tbl Soy Sauce

2 1/2 tbl Brown Sugar

2 tsp Sesame Seeds (I used toasted ones)

Ground Black Pepper to taste

Green onion, garlic & ginger ("Oh, Gilligan...")

To serve, buns of course, and your choices of toppings. Lettuce, tomato, hot mustard, catsup, Sriracha sauce (for a bit of a kick), Kimchi (for a real Korean flavor) and/or Quick Cucumber Carrot Pickle (this is quite tasty, and easy – give it a try, the recipe follows).

Quick Cucumber Carrot Pickle

1 cup matchstick cut Carrots

1 cup matchstick cut Cucumber

1/2 tsp Sesame Seeds

4 tsp Rice Wine Vinegar

1/2 tsp Sugar

Matchsticks...

In a large bowl mix all the burger components. Set aside for at least 15 minutes to allow the flavors to penetrate the meat. You can mix and refrigerate overnight, bring to room temperature before cooking.

Mix the goodies...

Make four patties out of the meat mixture.

Two out of four ain't bad...

Make the Quick Cucumber Carrot Pickle by mixing all together (difficult, huh?). Stir now & then…

Be sure to use your fanciest plastic container...

Cook the burgers to your desired doneness and using your preferred method – I’m assuming you know how to cook a damn hamburger…

Meat on the Big Green Egg... life is good...

Grilling the bread...

We have nice toasty buns...

Add your preferred condiments (I used some Chinese hot mustard hidden under a slice of tomato, topped with the tasty meat, then a generous amount of the Cuke/Carrot pickle and some catsup…), pour a cold beverage (beer being the choice here…), and eat…

Now eat!
