Cilantro-Jalapeno Margarita

With July 24 being National Tequila Day, let’s make a second Margarita of the Month! This is another gem from the Rick Bayless tome FRONTERA: Margaritas, Guacamoles and Snacks (a version of this recipe also was in a recent issue of the Rachael Ray mag, with Serrano pepper subbing for the Jalapeno). The holiday is just about here, and time’s a-wastin’, so let’s mix up a drink!

Cilantro-Jalapeno Margarita

1 to 3 (or more if you dare!) thin slices of Jalapeno (from a pepper that has been stemmed, halved and seeded)


2 – 3 springs of fresh Cilantro

1 1/2 ounces Silver Tequila

1 ounce fresh Lime Juice

1/2 ounce Rich Simple Syrup (see note below) or Light Agave Syrup


Coarse salt and lime wedge for the glass

Pour some salt into a small plate then moisten the lip of the glass with the lime wedge and upend the glass into the salt to crust the rim of the glass.

Put the jalapeno slices and one or two springs of cilantro into a cocktail shaker and muddle to release the tasty flavors. Add the tequila, lime juice and sweetener of choice. Throw in a big handful of ice, put the top on and shake away until the outside of the shaker gets frosty.

Take the remaining piece of cilantro and rub it between your palms to release it’s inherent aroma. Put the cilantro into the prepared glass and then strain the liquid from the shaker into the glass.


Now, drink away!


Cilantro-Jalapeno Margarita

You can make the heat in this drink pretty much to taste – for me (and I can take a lot of heat), three small slices of jalapeno gave the drink enough heat that you could tell it was there, but was not over-powering… for “normal” people I’d start with one or two slices and then go from there.

Note: Bayless uses a double-sweet (or “rich”) simple syrup in the ‘ritas from his book. To make it put 2 cups granulated sugar in a saucepan with 1 cup water and bring to a boil while stirring until the sugar is all dissolved. Remove from heat an let cool then refrigerate.
